canonical guacamole

Guacamole is a personal thing. Here is our take, but start here and tweak it to your own taste.  Homemade guac is always ever until the end of time better that the dreck you buy.  When your guests start raving, pull out your most slightly embarassed self deprecating smile. Add a small shrug. They might hate you, but whose guac are they eating anyway?

Ingredients

  • 3 ripe avocados
  • 3 scallions (green onions)
  • 1 big ripe tomato
  • garlic (we do 1-2 cloves), chopped or microplaned
  • salt, pepper
  • hot sauce (tabasco, sriracha, Franks, whatever)
  • chili powder
  • citrus juice (lemon, lime)
  • chopped cilantro leaves

Directions

  1. chop the tomato, scallion, garlic, cilantro leaves
  2.  mix with the avocado
  3. start adding your flavorings until you get it right for you
  4. serve with corn chips, on meat, as a theraputic poultice whenever Heidi Klum gets around to answering my texts…
